Ghee is clarified butter and has a fragrance that is sweet like caramel. At room temperature, ghee has a smooth, creamy texture. When it is melted, it resembles liquid gold. Made from unsalted butter, composed essentially of water, butterfat, and solids of the protein casein, pure ghee is made by a painstaking process. The butter is slowly heated until the water fully evaporates and the casein separates from the pure butterfat. Removing the casein from butter has the advantage of holding down cholesterol.
