
A Brinjal With Yoghurt Delight

INGREDIENTS
500g brinjal, steamed and the skin peeled off
2 tablespoons oil
1 onion, chopped
1 teaspoon salt
1 large tomatoe, seeded and chopped
2 tablespoons chopped coriander leaves
1 teaspoon garam masala
250g yoghurt
METHOD
1. Mash the steamed and cooked brinjal well.
2. Heat oil and stir fry the onion and tomatoes till the onion turns golden brown.
3. Add in the salt and garam masala. Mix well.
4. Turn off the heat.
5. Beat yoghurt in a bowl until smooth. Add in the rest of the ingredients and mix well.
6. Refrigerate for 2 hours before serving.
