INGREDIENTS
200 g plain flour, sifted
1/2 teaspoon salt
2 tablespoons caster sugar
1 teaspoon instant yeast
1 medium egg, lightly beaten (room temperature)
280 ml lukewarm water
150 g cream style corn
120 g toasted and finely pounded peanuts
70 g granulated sugar
40 g butter or margarine (optional)
METHOD
1. Put the first 7 ingredients into a mixing bowl and beat the mixture well until
you get a smooth batter.
2. Cover the bowl and leave aside for 40 minutes or until it becomes frothy.
3. Heat a 13 cm non-stick pan. Grease very lightly with oil or butter.
4. Pour in a ladleful of the batter into the pan. Using the back of the ladle smooth
the batter out evenly. Cover pan with a lid and cook until bubbles appear.
5. Sprinkle equal amounts of pounded peanuts and sugar over the pancake.
Dot with a teaspoon of butter.
6. Fold pancake into half and serve.
