
Asian Style Cabbage Coleslaw

INGREDIENTS
2 garlic cloves, minced
4 cm young ginger, julienned
60 ml rice vinegar
1 tablespoon corn oil
100 g creamy peanut butter
21/2 tablespoons Kikkoman soy sauce
30 g brown sugar
80 g finely shredded red cabbage
80 g finely shredded Tientsin cabbage
80 g finely shredded green cabbage
50 g finely sliced red capsicum
3 tablespoons finely chopped spring onions
3 tablespoons finely chopped coriander leaves
METHOD
1. Place the first 7 ingredients in a small bowl. Using a whisk
or wooden spoon, stir until well combined and the sugar
completely dissolves.
2. Place all the vegetables in a salad bowl.
3. Pour the prepared dressing over it and toss well.
4. Serve immediately.
