INGREDIENTS:
500 g rice grains
300 g jaggery, chopped
100 ml water
1 1/2 tablespoons white sesame seeds, dry roasted till aromatic
10 cardamoms, powdered
1 teaspoon ginger powder
oil for deep frying
METHOD:
- Wash and soak rice grains for one hour and spread it on a large cloth for about half an hour.
- The rice will become almost dry but still remain slightly damp. Powder it by using a coffee grinder.
- Boil jaggery and water together until the syrup becomes thick like a paste. To test this, drop a very small quantity of the syrup in water. it should solidify immediately.
- Mix in the rest of the ingredients except oil and mix well to form a soft dough.
- Keep covered for about 8 hours.
- Heat oil for deep frying.
- Place a ball of the dough on a plastic sheet and flatten it by hand, so that it becomes a flat round shape.
- Deep fry this in oil, turning it until it becomes golden brown on both sides. Drain on absorbent paper.
