
Banana Ginger Muffins

INGREDIENTS
125 g butter, room temperature
60 g caster sugar
1 large egg, lightly beaten
3 medium bananas, mashed
250 g self-raising flour
1 teaspoon ground cinnamon
1/4 teaspoon bicarbonate of soda
100 g chopped crystallized ginger
100 g chopped walnuts
METHOD
1 Preheat oven to 180 degree Celsius.
2 Grease muffin pans or line with paper cases.
3 Cream butter and sugar lightly. Add the egg and mashed bananas. Stir to combine well.
4 Sift in the flour, cinnamon and bicarbonate of soda and combine well.
5 Add the ginger and walnuts and combine well.
6 Put 3-4 tablespoons of the prepared muffin mix into the muffin pans and bake for 25 minutes or when a skewer comes out clean.
