Black Pepper Prawns

Cooking time: 15 minutes
Serves: 6
 
 
INGREDIENTS
 
3 tablespoons black peppercorns
2 teaspoons fennel
10 cardamoms
10 shallots, peeled
10 garlic cloves, peeled
2 cm ginger
3 chilli padi
1 teaspoon urad dhall
1 teaspoon mustard seeds
1 teaspoon turmeric powder
2 sprigs curry leaves
1 tablespoon dark soya sauce
3 tablespoons water
1 teaspoon salt
750 g large prawns, shelled but leave the tails intact
 
METHOD
 
1. Put the first 7 ingredients into a mortar and using a pestle, pound coarsely.
2. Heat oil and fry the urad dhall until golden brown.
3. Add the mustard seeds and let it splutter.
4. Add the pounded ingredients and sauté for 3 minutes.
5. Add the remaining ingredients and stir-fry till prawns are cooked and almost dry.
