
Chocolate Chips Cup Cakes

INGREDIENTS
3 large eggs
180 g salted butter, room temperature
220 g caster sugar
grated rind of 1 lemon
125 ml milk
1 tablespoon orange juice
250 g cake flour
2 teaspoons baking powder
100 g mini chocolate chips or 100 g glace cherries, chopped
METHOD
1 Preheat oven to 180° C.
2 Beat eggs, butter, sugar and lemon rind using an electric beater until light and fluffy.
3 Stir in the milk and orange juice.
4 Sift in the flour and baking powder and fold it in. Add in the chocolate chips or cherries.
5 Spoon batter into paper cups up to three-quarters full.
6 Bake for 20-25 minutes.
