Chocolate Walnut Cake

   
INGREDIENTS
 
240 g plain flour
80 g cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons bicarbonate of soda
1/2 level teaspoon fine salt
380 g caster sugar
2 large eggs
250 ml milk
125 ml corn oil or vegetable oil
2 teaspoons vanilla essence
250 ml boiling water
100 g walnuts, chopped coarsely
 
METHOD
 
1 Grease a 20 cm cake tin and dust it with flour.
2 Sieve the flour, cocoa, baking powder, bicarbonate of soda and salt into a mixing bowl.
3 Preheat oven to 180°c.
4 Add in the caster sugar, eggs, milk, corn oil and essence.
5 Beat at medium speed for about 2 minutes.
6 Add in the boiling water and beat further for 1 minute.
7 Fold in the walnuts gently.
8 Pour batter into the cake tin and bake for about 50-60 minutes.
