Cream of Brocolli Soup

   
INGREDIENTS
 
80 g butter
2 medium onions, chopped
1/2 cup plain flour
1250 ml cups water
1 kg broccoli, chopped
1 tomatoes chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
400 ml milk
100 ml natural yoghurt
 
METHOD
 
1. Melt butter in a saucepan and add in the chopped onions and sauté till it is
     lightly browned.
2. Stir in the flour over medium heat for a while and stir in the water and the
     rest of the ingredients except milk and yoghurt.
3. Bring to boil, stirring until the broccoli is tender. Cool it thoroughly.
4. Blend mixture in a blender until smooth, add milk and yoghurt and reheat
    but do not boil.
