
Creamy Caramel Nut Slice

INGREDIENTS
140 g self-raising flour
200 g soft brown sugar
60 g desiccated coconut
130 g butter, melted
1 teaspoon vanilla essence
1 can sweetened condensed milk
2 tablespoons golden syrup
125 g thickened cream
2 tablespoons melted butter
20 g flour, sifted
80 g chopped nuts
150 g baking chocolate
METHOD
1 Preheat oven to 180篊. Line a 18 cm x 28 cm lamington pan with non-stick paper.
2 Combine first 5 ingredients well. Press into the prepared pan. Bake for 15 minutes and leave aside to cool.
3 Combine condensed milk, golden syrup, cream and butter in pan. Bring to boil stirring, simmer stirring for 5 minutes, pour over base.
4 Sprinkle nuts over caramel. Bake for a further 20 minutes and cool.
5 Melt chocolate in a double boiler and pour over the caramel. Leave to set before cutting into bars.
