
Cucumber Cold Noodle

INGREDIENTS
200 g spinach or soba noodles
150 g cucumber, seeded and cut into fine strips
100 g carrot, cut into fine strips
100 g fresh mushrooms, sliced thinly
3 tablespoons chilli oil
2 tablespoons sesame oil
2 tablespoons oyster sauce
2 tablespoons cooking wine
2 tablespoon plum sauce
2 tablespoons sesame seeds, dry roasted until lightly golden
METHOD
1. Boil the noodles according to the directions on the packet. Drain and rinse
in cold water. Keep chilled.
2. Place the noodles, cucumber, carrot and mushroom slices into a bowl.
3. Mix the 2 types of oil, oyster sauce, cooking wine and plum sauce in a small bowl.
4. Pour over the noodle and toss well to combine.
5. Sprinkle with toasted sesame seeds before serving.
