Fruit Cake

   
INGREDIENTS
 
750 gs mixed dried fruits
250 gs self raising flour
1 tsp baking powder
250 gs butter
200 gs caster sugar
4 medium eggs , beaten
grated rind of 1 lemon
 
METHOD
 
1 Mix the dried fruits with 1 tbsp of the flour.
2 Cream butter and sugar until creamy
3 Add in the beaten eggs, a little at a time until all are used up
4 Fold in the flour and baking powder and then the dried fruits.
5 Pour the batter into a cake tin lined with greaseproof paper.
6 Bake at 180 degrees Celsius for 1 ½ hours or until the cake is cooked.
7 When thoroughly cooled, slice cake and serve with tea.
