INGREDIENTS
 
10 cloves garlic
10 shallots
20 g coriander roots
6 chillie padies
2 tablespoons oil
500 g minced chicken or pork
6 tablespoon roasted peanuts, coarsely pounded
3 tablespoon fish sauce or more
5 tablespoon chopped palm sugar
a few sprigs of coriander leaves, chopped
2 red chillies, sliced
few pieces pineapple rings or tangerine
 
METHOD
 
1 Chop the garlic, shallots, coriander roots and chilli padies coarsely.
2 Heat oil and fry chopped ingredients until fragrant.
3 Add in the other ingredients except the last 3 and cook till chicken is thoroughly cooked.
4 Serve on pineapple rings, garnished with coriander leaves and sliced chillies.
