GAZPACHO SOUP

INGREDIENTS
 
300 g ripe tomatoes
300 g cucumbers, peeled
150 g red capsicum, seded
2 tablespoons extra virgin olive oil
5 tablespoons lemon juice or red wine vinegar
1/2 teaspoon salt
1 red chilli
2 cloves garlic
 
METHOD
 
1. Blend the above and place in a bowl. Taste for salt and adjust
     lemon juice or red wine vinegar.
2. Add the following before serving.
 
1 medium tomato, diced
1 small cucumber, diced
1/4 red capsicum, seeded and finely chopped
2 tablespoons finely chopped spring onions
3 stalks coriander leaves, finely chopped
