Long Beans With Eggs

   
INGREDIENTS
 
2 tablespoons oil
5 cloves garlic, pounded
5 shallots, pounded
2 red chillies, sliced
3 tablespoons dried prawns, soaked in water for 20 minutes and pounded
500 g long beans, cut into 2 cm pieces
1 teaspoon sugar
1 teaspoon salt
50 ml water
3 eggs, lightly beaten with pinch of salt
 
METHOD
 
1. Heat oil and saute the garlic, shallots, chillies and dried prawns until very aromatic.
2. Add in the long beans, sugar, salt and water. Stir fry over high heat until long beans
    are cooked but still firm.
3 .Push the long beans to the sides of the work and pour in the beaten eggs.
4. Cook over low heat until the egg is almost set. Push in the long beans and stir fry
    over high heat until the egg is set.
