Prawn Siew Mai

INGREDIENTS
 
400 g medium sized prawns, peeled and minced
100 g chicken fillet, minced
60 g finely chopped carrots
4 water chestnuts, finely chopped
2 tablespoons finely chopped spring onions
1/2 teaspoon salt
1 tablespoon sesame oil
2 teaspoons light soy sauce
1/4 teaspoon ground white pepper
1 tablespoon cornflour or tapioca flour
20 round wanton wrappers
 
METHOD
 
1 Combine well all ingredients except the wanton wrappers. Cover with cling wrap and refrigerate this mixture for 1 hour.
2 Put 1 tablespoon of filling in the centre of each wanton skin.
3 Gather the edge of the wrapper to the top so that only the top of the filling is seen.
4 Line the bamboo steaming rack with banana leaf or a metal plate.
5 Lightly brush with oil then place dumplings on it. Steam over rapid boiling water for 10 minutes or till cooked.
