Sambal Prawns

   
INGREDIENTS
 
7 fresh red chillies
100 g shallots
2 medium tomatoes, chopped
1 teaspoon ground turmeric
100 ml water
2 tablespoons oil
1 teaspoon salt
2 teaspoons sugar
100 ml thick coconut milk
500 g prawns, shelled but with tail intact
 
METHOD
 
1. Boil chillies, shallots and tomatoes in the water and turmeric until shallots become soft.
2. Blend till smooth.
3. Heat oil and fry the blended ingredients well.
4. Add in the rest of the ingredients except the prawns and boil till sambal thickens.
5. Add in the prawns and boil till cooked.
