
Sambal Telor

INGREDIENTS
30 g dried chillies, cut into 2 cm pieces and soaked for 30 minutes
100 g shallots, peeled
5 cloves garlic, peeled
2 cm ginger, peeled
2 cm galangal, peeled
2 teaspoons shrimp paste
1 stalk lemon grass, use the bottom 5 cm, shredded
50 g tamarind mixed with 250 ml water and strained
4 tablespoons cooking oil
1 large onion, diced
3 tablespoons tomato ketchup
2 teaspoons sugar
1 teaspoon salt
6 large eggs, hard-boiled and shelled
METHOD
1. Put the first 8 ingredients into a blender and blend till smooth.
2. Heat oil and fry the onion till it turns light golden brown.
3. Add the blended ingredients and sauté over low heat until oil separates.
4. Add the remaining ingredients and cook, stirring occasionally for 3 minutes.
Note: Eggs can be replaced with 600g prawns, squid or fish balls.
