
Spaghetti With Assorted Mushrooms

INGREDIENTS
250 g uncooked spaghetti
2 tablespoons olive oil
5 cloves garlic, minced
A handful of basil leaves
300 g button mushrooms, stalks removed and sliced
300 g shiitake mushrooms, stalks removed and sliced
300 g oyster mushrooms, sliced
200 ml light sour cream
250 ml low fat milk
4 tablespoons finely chopped chives
Salt and freshly ground pepper to taste
METHOD
1. Prepare pasta according to package directions.
2. Heat olive oil and sauté the garlic and basil leaves until aromatic.
3. Add the mushrooms and sauté for 10 minutes or until the mushrooms release their liquid.
4. Whisk the sour cream and milk in a small bowl until smooth. Pour on the mushrooms,
add salt and pepper and bring to boil. Remove from heat.
5. Drain the pasta and mix with the mushroom sauce. Toss well.
6. Dish out the pasta including the sauce onto serving plates. Sprinkle with grated Parmesan
cheese and serve.
