
Squids and Prawns in Hot Sauce

INGREDIENTS
1 teaspoon shrimp paste
6 shallots
5 cloves garlic
4 red chillies
10 chilli padies
2 tablespoons oil
handful of sweet basil leaves
250 ml thick coconut milk
500 g prawns, shelled and steamed
500 g squids, cut into rings and steamed
3 tablespoons fish sauce
1 teaspoon sugar
2 tablespoons chopped coriander leaves
METHOD
1. Chop the first 5 ingredients coarsely.
2. Heat oil and sauté the chopped ingredients and the basil leaves until aromatic.
3. Add in the rest of the ingredients and bring to boil.
4. Serve with rice.
