Stir Fried Beansprouts with Crispy Salted Fish

     INGREDIETNS
 
2 tablespoons oil
3 cloves garlic, minced
2 thin slices ginger
2 red chillies, seeded and cut into strips
500 g beansprouts
5 stalks spring onions, cut into 3 cm pieces
1- 1 1/2 teaspoon salt
2 teaspoons sugar
1/2 teaspoon ground pepper
1 tablespoon fried onion
80 g salted dried fish, diced and fried till crispy
 
METHOD
 
1. Heat oil. Add in the minced garlic, ginger and chilli strips and stir fry till fragrant.
2. Add in the beansprouts, spring onion, salt, sugar and pepper and stir fry over
    high heat until beansprout is cooked through but still crunchy.
3. Sprinkle with the fried onion and fried fish bits before serving.
