
Sweet Fragrant Lotus Dessert

INGREDIENTS
2500 ml water
3 slices ginger
300 g lotus root, slices into 1 cm pieces
500 g lotus root, chopped coarsely and blended with 500 ml water
100 g red dates, seeded
5 pandan leaves, tied into a knot
140 g rock sugar (+ or-)
200 g cooked lotus seeds
METHOD
1. Put the water, ginger slices, sliced lotus roots, blended lotus roods and red dates into
a pot and cook for about 1 hour or until tender.
2. Remove the red dates and the slices of lotus roots to a plate.
3. Strain the balance and throw away the chopped lotus roots.
4. Put back the slices root and the red dates into the strained soup.
5. Add in the rest of the ingredients and carry on cooking for about 1/2 hour.
6. Serve hot and cold.
