Thai Style Banana Fritters

   
 
Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 6
 
 
INGREDIENTS
 
170 g rice flour
100 g plain flour
1 teaspoon bicarbonate of soda
500 ml thick coconut milk
1/2 teaspoon salt
1 tablespoon caster sugar
30 g white sesame seeds
6 tablespoons (20 g) desiccated coconut
Oil for deep frying
10 medium bananas
 
METHOD
 
1 Combine the first 8 ingredients in a mixing bowl to make a slightly thick batter.
2 Heat oil for deep frying.
3 Dip the banana pieces into the batter and drop into the hot oil.
4 Fry till golden brown and drain on absorbent paper.
