Tube Butter Cake

   
INGREDIENTS
 
180 g butter
200 g caster sugar
Rind of 1 orange
1 teaspoon salt
3 eggs
125 ml UHT milk
1 tablespoon orange juice
1/2 teaspoon vanilla essence
250g superfine flour
2 teaspoon baking powder
 
METHOD
 
1 Preheat oven to 180 ºC. Grease and line an 18cm square or round cake pan with greaseproof paper.
2 Cream butter, sugar and orange rind until light and creamy. Add the combined milk mixture gradually. Fold in sifted ingredients until well combined. Beat in eggs one at a time.
3 Turn mixture into prepared pan. Make a shallow well in the centre. This will level up the cake when baked. Bake in preheated oven for 40 to 50 minutes or until done when tested with a wooden skewer.
To make a tube cake
Line a few metal cans (save it when you buy canned food – recycle) with non stick paper and let it extend by 2 cm on top of the can. Fill it up with the batter.
