Winter Melon Crisp

   
TO MAKE THE FILLING
 
INGREDIENTS
 
500 g candied winter melon, chopped
80 g sugar
80 g cooked glutinous rice flour
30 g sesame seeds, roasted and pounded
100 ml water
2 teaspoons oil
 
METHOD
 
1 Put all the above ingredients into a bowl and mix well.
Divide into portions.
 
PASTRY 1
 
INGREDIENTS
 
150 g bread flour
150 g plain flour
50 g caster sugar
100 g lard or vegetable shortening
6 tablespoons water
1 egg yolk, for brushing
PASTRY 2
100 g flour
50 g lard or vegetable shortening
 
METHOD
 
1 Lay both the flour In Pastry 1 on a working top.
2 Make a well in the centre and add in the sugar, lard and water and knead to form a soft dough.
3 Mix the ingredients in Pastry 2 together to form a sticky dough.
4 Divide Pastry No 1 and 2 into equal portions with filling.
5 Wrap Pastry No 1 in Pastry 2 and roll out.
6 Fill with the prepared filling and flatten it. Brush with egg yolk.
7 Place on a baking tray and bake at 180° C till golden brown.
