
Yam Cake

INGREDIENTS
300 g rice flour
80 g tang mein flour (wheatstarch)
500 ml water
3 tablespoons oil
2 pieces lapcheong (Chinese sausage), sliced
300 g yam, peeled and diced
50 g bacon, sliced
50 g dried prawns, chopped
500 ml water
2 teaspoons salt
1 tablespoon sugar
1 teaspoon sesame oil
ground pepper
5 stalks spring onions, chopped
1 red chilli, sliced
1 tablespoon dry roasted sesame seeds
METHOD
1 Mix the rice flour and the tang mein flour with the water.
2 Heat oil. Fry the sausages, yam, bacon and dried prawns till fragrant.
3 Add in the water and the seasoning.
4 Bring to boil.
5 When it is boiling pour this into the rice flour mixture and stir well.
6 Place the batter in a cake tin and steam for 30 minutes or until cooked through.
7 Garnish with spring onions, sesame seeds and sliced red chilli and serve with dipping sauce.
DIPPING SAUCE
100 ml hot water
3 tablespoons dark soya sauce
1 tablespoon light soya sauce
1 tablespoon sugar
METHOD
1 Mix the above together.
